Our Story

The passion Hauts du Clos

Le Domaine des Hauts du Clos is a 20-hectare family-run estate located in Carcès, in the Var department, within the Côtes de Provence appellation.

​

Situated in the heart of "Green Provence," the terroir is composed of clay-limestone soils and benefits from a temperate semi-continental climate, making it a central area for Côtes de Provence wine production.


This Protected Designation of Origin is currently the most sought-after for rosé wines.

Although the estate lies about fifty kilometers from the coastline (near Saint-Tropez), it retains the peaceful charm of Provençal villages during the summer season.

The grape varieties grown on the estate include Syrah, Cinsault, Grenache, Mourvèdre, Carignan, and Rolle.


This diversity results in silky, fresh wines that express the full minerality and suppleness of the fruit.

We are certified HVE (High Environmental Value) Level 3. This certification ensures that our vineyard is managed using sustainable, conservation-minded practices that respect biodiversity and the ecosystem's topographic features.

We harvest exclusively at night (between 3 a.m. and 6 a.m.) to obtain the freshest grapes possible, minimizing oxidation and ensuring excellent quality free-run juice.

Our pressing technique is known as "direct pressing" using a closed-cage pneumatic press. Oxidation is nearly non-existent, and skin maceration is very short, resulting in pale colors while preserving aromas.

​

A unique feature of our estate is our "cold fermentation" method, carried out at temperatures between 14 and 16 °C (compared to the usual 17 to 19 °C), in enamel-lined concrete tanks. This longer fermentation process yields wines that are more aromatic and expressive, with a rich, silky mouthfeel and no bitterness or sharp acidity.
